Gluten Free Banana Bread

Banana

 

Bananas are not only delicious prebiotic foods but they contain potassium, magnesium and the amino acid L-tryptophan, which supports the healthy production of our neurotransmitters, serotonin and melatonin.

The following recipe in addition to my Banana Pikelets,  are two of the many recipes I use bananas in that are Bees family favourites!  

 

GF BANANA BREAD

INGREDIENTS

  • 1 bread loaf tin- roughly 15-27cm in size
  • 4 ripe bananas
  • 4 organic eggs
  • 2 tsp of cinnamon
  • 1 tsp of nutmeg
  • 1 cup of banana flour
  • 1 cup of chopped walnuts
  • 1 whole walnut- to place on top of the bread 🙂
  • 1/3 cup of melted coconut oil
  • 2 Tbs raw organic honey (can use rice syrup or maple syrup)
  • 1 tsp of organic vanilla powder
  • 1 tsp of baking powder
  • Organic butter to grease / or sheet of baking paper

 

METHOD

  • Preheat your oven to 180 degree celsius.
  • Grease the bread loaf tin- or line with baking paper
  • Blend bananas, eggs, honey, vanilla and coconut oil- I use stick hand blender, until it becomes like a smoothie consistency
  • Then stir through baking powder and cinnamon, continue to blend
  • Add walnuts and then sift through the flour
  • Once stirred thoroughly, pour into baking loaf tin
  • Top it with a walnut
  • Bake in the oven for 30min or until a fork in the middle comes out clean
  • Allow to cool and serve when desired 🙂

We normally serve it with delicious grass fed organic butter- enjoy!!

DIY Toxic Free Cleaning Scrub

Many people have asked me what I use to naturally scrub/clean the bathroom, kitchen and sinks with since I’ve gone chemical free?

I understand the need for the ‘feeling of clean’ and the association we often have is related to a chemical ‘clean’ smell.

To cater for this need, AND use something that actually works i’ve trialled numerous products with a mixture of results. Having moved countries, I had to start again which took time and money until I came across SUPER easy, money saving, time saving DIY solutions that work!!!

I use a combination of Enviro Care Earth in a spray bottle (for my quick daily cleans).

For a thorough clean,  I use a soft scrub and it takes me 2 minutes to make!

 

INGREDIENTS

3/4 cup of baking soda

1/4 cup of liquid castile soap -( I use Dr Bronner’s baby mild version)

1 Tbsp. water

1 Tbsp white vinegar

5 drops of Eucalyptus oil: due to the oil containing natural antiseptic, antifungal, antiviral, anti-microbial and antibacterial properties.

5 drops of Lemon oil: due to also containing the ‘anti’ properties above + cuts through the grease + grime and anything sticky.

 

METHOD

Mix all the ingredients together- resulting in a paste consistency. I apply with a cloth/rag let it sit- do its magic and then come back to wipe it clean- less elbow grease required from me that way 🙂

Enjoy the fresh ‘clean’ smell without the chemical load on your, and your family’s health

Jaffa Goodness- Wild Orange + Cacao Balls

Bliss Balls- sound exactly how they make you feel- blissful.

With that delicious nutritious hit of cacao and the uplifting, mood enhancing effect of doTERRA’s wild orange pure food grade essential, not to mention the jaffa taste with every bite, these balls are a must create!!

INGREDIENTS:

  • 12 pitted dates, soaked in boiling water for 10mins, then drained
  • 1 cup almond meal/ or ground blanched almonds
  • 1/3 cup coconut oil, melted
  • 1⁄4 cup raw cacao powder
  • 1tsp pure vanilla powder
  • 8 drops of doTERRA wild orange essential oil
  • 1 cup of desiccated coconut for coating

METHOD:

  • Blend dates, vanilla and coconut oil in blender until smooth
  • Add remaining ingredients and then continue to process until smooth
  • Pour mix out and form into a balls
  • Pour desiccated coconut on a flat surface and then roll the balls in the desiccated coconut until coated
  • Pop in fridge until set 🙂
  • Enjoy with a cup of nourishing herbal tea mindfully or shared with loved ones
