Nanny Bees’ Cottage Pie

This recipe is one I learnt from my mother-in-law in the UK. As with MOST recipes, I have modified it to ensure it’s packed with EVEN more nutrition 😜, but full recognition goes to Nanny Bees for sharing it with me and for the times we shared making it together. 

INGREDIENTS

500g of grass fed organic mince

5 cups of raw veggies (this is often what is seasonal or comes from our organic veggie box)

My go to BASICS are:

carrots, pumpkin (butternut squash), parsnip, celery, zucchini, broccoli, cauliflower swede to make up my 5 cups.

2 cups Bone Broth

2 Tbsp of gluten free Tamari

1 tsp of arrowroot powder

6 Large potatoes (can use a combo of sweet and white or choose to have all the same)

1 red onion finely chopped

1 handful fresh parsley chopped finely
1 handful of fresh basil chopped roughly
1/2 tsp sea salt
1 pinch of ground black pepper

METHOD

In a pot, place mince and onion in bone broth and slow cook

Add veggies your tamari and add water- if needed and continue to slow cook until cooked through.

Throw in fresh herbs and when veggies are cooked gently blend with stick blender for smooth consistency (optional)

Add salt and pepper to taste

In a separate pot boil the potato- to mash later 

Place mince into a baking dish and when potato is ready, mash (with butter -optional) and spread on top.

Optional: (Nanny Bees’ trick) Place pie in the oven if butter was used in the potato to add a little crispy top.

Nutrient Dense Jellies

I LOVE this recipe.

I use the base recipe FREQUENTLY  and then vary what goodness I pack in them.

I featured many flavours we use including our current top 3 favourites. 

Hopefully this is detailed clearly below xx

My girls enjoy them, they also love gifting them to friends that may feel unwell.

AND… request them for birthdays in addition to a treat in their lunch boxes. (Helps when you have a range of fun chocolate moulds for them to set in)

BASE

3 1/2 Tbsp of good quality grass fed (Organic pasture raised etc) gelatin

1/3 cup of cold filtered water

1 1/2 cups of flavour 

e.g green smoothie, frozen fruit, sweet herbal tea etc.

* OPTIONAL: fun chocolate moulds to set in but not necessary as you can cut them into squares if set in a dish or you can use ice cube moulds

EXTRAS

Vitamin C powder 

Probiotics

Veggie powder (I use veggie Hero by Nutra -organics)

Green powder or spirulina 

Lemon – Zest and juice

Zinc drops

Nut butter

Coconut cream

Nut mylk


METHOD

It’s great to bloom your gelatin first. Therefore combine your 3 1/2 Tbsp of gelatin with 1/3 cup of water stir quickly then allow to settle (watch it ‘Bloom’)

Heat your flavour eg. if it’s frozen fruit like raspberries stew until thick, or warm smoothie. Once flavour is warm add bloomed gelatin and dissolve completely.

Allow to cool and then add your desired powders- dissolve well.

*Note : If adding a probiotic ensure the liquid is cooled completely as to not destroy the bacteria.

CLEAN & GREEN

3 1/2 Tbsp Gelatin

1 1/2  cups green smoothie of your choice 

– You are welcome to try my glowing green smoothie here

1⁄2 teaspoon green powder, such as spirulina

3 capsules of multi-strain probiotic

METHOD

Bloom the gelatin – detailed in method above

Warm smoothie blend to then fold Bloom into it until completely dissolved

Add probiotic and greens powder once cooled.

Pour into glass container approx. 10x15cm OR into selected moulds

Refrigerate for at least an hour then either cut into squares or pop out of moulds to store tightly into a jar back in the fridge

Store up to a week – if it lasts that long 😉

 

 

RASPBERRY LEMONADE

3 1/2 Tbsp Gelatin

1 1/2 cups of frozen organic raspberries

1 lemon juice (zest optional)

8 Zinc drops – (I use bioceuticals) 
 
Either :  1 Tbsp of veggie hero 
 
OR
 
vitamin C powder
 
 
 
METHOD
 
Bloom the gelatin
 
Stew the raspberries and lemon juice and then fold the bloom until dissolved.
 
Using a stick blender to smooth mixture and then add desired

powders/liquid when cooled.
 

Pour into glass container approx. 10x15cm OR into selected moulds

Refrigerate for at least an hour then either cut into squares or pop out of moulds to store tightly into a jar back in the fridge

Store up to a week – if it lasts that long 😉

 

 

STRAWBERRIES & CREAM

1 cup of frozen organic strawberries

1/2 cup of coconut cream

2 capsules of probiotic

 

METHOD

Bloom the gelatin
 
Stew the strawberries and coconut cream until almost boiling and then
 
removed from heat fold the bloom until dissolved.
 
Using a stick blender to smooth mixture and then add probiotic powder
 
when completely cooled.

 

Pour into glass container approx. 10x15cm OR into selected moulds

Refrigerate for at least an hour then either cut into squares or pop out of moulds to store tightly into a jar back in the fridge

Store up to a week – if it lasts that long 😜

 

 

Banana Pikelets

Banana Pikelets

I am continually looking for ways to optimise the family’s nutrition within EVERY meal.

I often question ‘how can I upgrade this meal to be as nutrient dense as possible, using the power of nature combinations of course?’

Below is my version of pancakes. Pikelets really, as my girls like them small- but you can create whatever size you like.

What I love about this recipe works well for breakfast AND snacks. So feel free to double the recipe to ensure you have left overs for lunch boxes or afternoon tea 🙂 

INGREDIENTS

  • 1 ripe banana
  • 2  organic eggs
  • 1/4 cup of banana flour
  • pinch of organic vanilla powder and cinnamon
  • 1/2 cup of spinach- or your choice of green
  • Organic butter for cooking and serving
  • Medium fry pan

METHOD

  • Blend all ingredients together
  • Allow butter to melt on medium heat and then pour mixture into hot fry pan- Cook as you would a normal pancake/pikelet adjusting the heat as appropriate
  • Once bubbles appear, flip to see the golden cooked colour.

SERVE

I often serve it on its own with butter but have also served with:

  • Greek yoghurt with a sprinkle of spirulina
  • Coconut yoghurt with chia seeds
  • Fresh berries, stewed berries

Natural CLEAN Hand Made Chocolate

INGREDIENTS

BASE

I cup of cacao butter

1 cup of cacao powder

2 Tbsp of honey (can use maple syrup, or rice syrup)

 

EXTRAS

Peppermint leaves- for a choc mint flavour 5 leaves chopped finely

Raspberries: 1/4 cup of frozen raspberries

Handful of Nuts/Seeds/Chia of your choice

 

METHOD

Melt the cacao butter on low heat on the stove

Stir in the powder and honey 

Add in your chosen extras and then pour into chosen moulds.

Set in the fridge

BLISS BALL RECIPE

This recipe has been a winner and a staple ‘treat’ for us Bees for YEARS

 May this CLEAN treat delight your senses and nourish you as it has for us.

RECIPE BASE:

 

INGREDIENTS:

12 pitted dates, soaked in boiling water for 10mins, then drained

1 cup almond meal/ or ground blanched almonds

1/3 cup coconut oil, melted

1tsp pure vanilla powder

1 cup of desiccated coconut for coating

 

CHOOSE YOUR FLAVOUR:

Nut Delight:

For Nutty goodness in each bite I use either;

  • Peanut butter
  • Almond butter
  • Cashew butter

Although you can use any nut butter that is free of additives and ideally freshly ground

Raspberry BURST:

1/4 cup of frozen raspberries that also live in the centre and burst raspberry goodness in your mouth which each bite

CHOCOLATE balls:

All options can include cacao if you want the balls to be chocolatey.

If a hit of magnesium and nourishment of chocolate is your thing (its mine) you will need 1/4 of organic cacao.

 

METHOD:

Blend dates, vanilla and coconut oil in blender until smooth

Add remaining ingredients and then continue to process until smooth

Pour mix out and form into a balls

(If using frozen raspberries, roll the ball around 1 raspberry at a time-  for the raspberry goodness burst in your mouth!)

Pour desiccated coconut on a flat surface and then roll the balls in the desiccated coconut until coated

Pop in fridge until set 🙂

 

Enjoy with a cup of nourishing herbal tea mindfully or shared with loved ones
